Ingredients :
Rice -1 cup
Water -2 cups(use the same cup used to measure rice to get good consistency of rice)
Raw Mangoes -2
Salt -as required
Turmeric powder -a pinch
For Seasoning:
Groundnut -1/2 tablespoon
Chana dal -1 tablespoon
Urad dal – 1 tablespoon
Mustard – 1/4 tablespoon
Jeera -1/4 tablespoon
Curryleaves -fistfull(guppedu)
Oil -3 tablespoons
Ginger-1 inch piece-grate it to small pieces.
Green chillies-4.Cut the green chillies to four pieces each.
Red chillies -3
Asafoetida-a pinch
Cashewnuts-1/2 tablespoon(optional)
***Select sour mangoes to add more taste***
Procedure
1.Cook the rice and keep it aside.Spread the rice in a plate and let it dry.So that it dries and do not become a paste while mixing.
2.Peel off the mangoes,grate them and keep the pulp aside.
3.Add turmeric powder,salt and a spoon of oil to the rice.(Adding oil at this step seperates the rice particles).
4.Keep a kadai on the stove,add oil and all the ingredients under seasoning step by step.First add mustard seeds,as the mustard seeds splutter add cashewnuts, groundnuts,chana dal,urad dal,red chillies,curry leaves,ginger,green chillies,asafoetida(Inguva).Once it is done add it to the plate of rice.
5.Now add the mango pulp to the rice.
6.Mix well all the ingredients and enjoy the yummy yummy mango rice.☺☺☺
